Kasoori methi are dried fenugreek leaves (Trigonella Foenum Graecum). They are used in Indian cooking and taste similar to a combination of celery and fennel with a slightly bitter bite. Fenugreek is used as a herb (dried or fresh leaves), spice (seeds), and vegetable (fresh leaves, sprouts, and microgreens). Fresh fenugreek leaves are an ingredient in some Indian curries. Sprouted seeds and microgreens are used in salads.
